Abstract: The concentrations of ten trace metals, cadmium, cobalt, chromium, copper, iron, manganese, nickel, lead, zinc and mercury in some East Asian vegetables and fruits were determined. Generally, all the vegetables studied had, relative to the other trace metals, higher concentrations of iron, zinc and manganese. The overall concentration of trace metals in fruits was also much lower than that of vegetables. © 1982.
