Abstract: Variations in amylase and protease activities among 16 local isolates of Rhizopus spp. were assessed. Rhizopus microsporus and the R. arrhizus isolates were consistently good producers of amylase. Good producers of protease were R. microsporus and the R. oligosporus isolates. No amylase or protease activity was detected in R. stolonifer. The results also showed that © 1987 Oxford University Press.
