Abstract: In view of the rising obesity cases worldwide, increased studies were carried out to discover and develop weight-loss drugs or supplements with reduced side effects.In this study,resin glycosides(RG),widely present in Convolvulaceae plants, which can inhibit pancreatic lipase(PL) and help to achieve weight loss.The result of this study revealed a series of RG content in Ipomoea aquatica(Kang Kong) and these compounds were responsible for the PL inhibitory effect. Meanwhile, Ipomoea aquatica leaves juice was treated with cellulase and protease to improve the quality of the product. The optimal treatment time for cellulase and protease is 60 minutes and 30 minutes, respectively.On this basis, adding protease can improve the oBrix and leucine content of Ipomoea aquatica leaves juice.
